Ohhhhh Hokey Pokey
Hokey Pokey is the Cornish term for Honeycomb. Although I don't think this is strictly speaking Honeycomb, as that to me is the stuff you get out of actual honey!
Either way this is a seriously easy treat to make, and will make lovely gifts for friends, which is mostly why I'm testing it!
The recipe doesn't make a massive amount, which for a Nigella recipe is quite surprising! But you can easily double, treble, or quadruple it! Although I wouldn't suggest eating too much of it whilst making it, it is seriously sweet!
Hokey Pokey

Ingredients
100g Caster sugar (I used granulated and it worked fine)
60ml Golden Syrup
1 1/2 tspns Bicarbonate of Soda
Method
1. Put the sugar and syrup into a saucepan and mix together. Once you put it on the heat you shouldn't mix it at all no matter how tempting it is!!
2. Place the pan on the heat and let the mixture melt, then turn to goo, then to a bubbling liquid the colour of maple syrup. (I didn't use maple syrup mostly because I was worried I wouldn't be able to tell when it was done!)
3. Off the heat, whisk in the bicarbonate of soda, the syrup will turn into a pale, aerated golden mix. Working fast, turn this immediately onto a piece of baking parchment or greased foil.
4. Leave it to set, and then bash at it so it breaks into lots of lovely crispy pieces.
Store in an airtight container.
NB. I found a lot of the mixture stuck to my spatula and pan, but don't worry this comes off nice and easy with hot water...thankfully!
