This sounds like a really odd combination doesn't it? Im still not sure how much I like it, but I definitely like it enough to eat the whole thing...
I saw the recipe on Tastespotting, but it actually comes from this blog.
Its a really simple recipe, and if the taste doesn't make you go oooo, then the colour definitely will!
Avocado and Lime Loaf
(adapted from Fuss Free Cooking)
Ingredients
2 avocados
1 lime
1 cup of self raising flour
3/4 cup sugar
2 tblespns golden syrup
1 egg
handful of pumpkin seeds
Method
1. Preheat the oven to 160C. Mash the avocado and add the juice of the lime. (I thought about adding the rind of the lime too but I'm not such a big fan of limes, but by all means add away!)
2. Add the egg, golden syrup and sugar to the mush and combine well.
3. Pour in the flour and mix.
4. Put in a greased loaf tin, scatter with the pumpkin seeds and bake for 40 minutes or until golden brown.
Mine didn't look as green as the one in the picture above, this could be because I took it at night! But it still looked ok. Also apologies for the bad pictures, I didn't get a chance to photograph it properly before we devoured it!
