Potato Gratin
After the meat feast of the last couple of days I decided to do a 'light', meat free dinner.
Ok so it's not quite light, it does use a heck of a lot of butter and cream, but theres salad on the side to balance it out!!
I adapted this recipe from Jamie Oliver's one, you can find the original here.
The main omission is the bacon, I don't actually eat pork or bacon, so you won't be finding any in my recipes. But please feel free to add it to whatever you want! Although I'm not so sure it will taste great with sweet things!!
Potato Gratin
(Serves 5)
Ingredients
10 potatoes (I used approx 2 per person)
1 red onion
1 white onion
3 cloves of garlic
a sprig o fresh rosemary
1 small red chilli
2 bay leaves
250ml single cream
300ml milk
50g butter
100g grated cheese (any you like, but possibly not parmesan as this will make it quite salty)
1 tsp cornflour
salt and pepper
Method
1. Preheat the oven to 200C/400F. Thinly slice the potatoes and arrange in a baking dish.
2. In a pan add the milk and cream, bay, rosemary, chilli garlic, salt and pepper. Bring to the boil, letting the herbs infuse into the liquid. Mix the cornflour with a dash of milk so it forms a loose paste and add to the pan.
3. Pour the milky cream over the potatoes and cook for 20 minutes.
4. Meanwhile slice the onions thinly and fry in the butter until soft but not coloured. After the 20 minutes is up, pour the onions on top of the potatoes, then sprinkle with the cheese and cook for a further 25 minutes.
5. Serve with a mixed green salad, or some lightly steamed vegetables for a slight feeling of smuggness!
