Every year we have a vegetable patch in our garden, and every year it somehow seems to become over run by strawberries! They are like the weed of the fruit world.
Thankfully because of the wonderful weather ( thanks global warming) we have had a gluttony of strawberries. Most of which have been eaten already, but with the smaller fruits its harder to find use for them. A while ago I bought Nigel Slaters' The Kitchen Diaries, alongside some other books which I'll mention in the future. This book is great. It has such a conversational feel to it, and the way Nigel writes is so sumptuous and tempting, making me want to eat everything in the book.
Also the photography isn't poncy or over exposed, which seems to be the style of choice for most food photographers.
So, back to the food. With the left over fruit I chose to make Nigel's Strawberry water ice. This recipe is seriously EASY. I don't even have an ice cream maker and it still came out beautifully!
Strawberry Water Ice
(from Nigel Slaters' The Kitchen Diaries)
Ingredients
250g strawberries or other small fruits e.g. raspberries
125g sugar
120ml water
Juice of half a lemon
Method
1. Put the sugar and water in a pan and boil until the sugar has dissolved. Once dissolved let the sugar syrup cool.
2. Hull and wash the strawberries. Blend them in a bowl until they are pureed. You can sieve them to get rid of the seeds but I have left them in.
3. Add the cooled sugar syrup and lemon juice to the strawberry puree.
4. Pour into a freezer safe tub and freeze for a couple of hours. If you have an ice cream maker pour into the bowl and follow the manufacturers instructions.
5. Every couple of hours fork through the mixture until its set.
